Bacon Stuffed Mushrooms

Nothing like being home for the holidays! Bring on the food, family, friends and football (though not in that order :-))! I absolutely LOVE Thanksgiving, and this year is turning out to be no different! My mom surprised us this year with a new approach to the traditional stuffed mushrooms that my aunt usually makes. She opted for Wind & Willow’s Bacon Stuffed Mushroom Appetizer Mix. This was super EASY, check out the ingredients:


First, we combined 8 ounces of low-fat cream cheese with the mix in the box.

I blended them together with a spatula, and since the cream cheese was already soft, the process was SUPER easy.


Next, I had to wash and de-stem the mushrooms. Once this was done I place them in a pie pan (cause most of the baking pans in my parents’ house are in use today), and spooned about a tablespoon of the mix into them.

Then it was time to add the topping, also, from the box (so EASY). I sprinkled on a little topping for each mushroom. Once this was done, the mushrooms were ready to bake.

It was then into the oven at 400°F for 12 minutes, or until the mushrooms browned.

These were totally delicious, but they got me to thinking, what else would work. The filling tasted a lot like cream cheese mixed with Lipton Recipe Secrets Onion Recipe Soup and Dip Mix, if you added some bacon. The topping was a a cheesy breadcrumb mix. Next time, I think I’ll make them this way. You could also literally put stuffing in the stuffed mushroom, that would also be DELICIOUS! So many options. Well, I have to go check the turkey!

Cookie Icing 101

As I mentioned in my previous post, the cookies were still too warm to decorate last night, and I’m a graduate student that had the opportunity to get some sleep. One guess what I chose to do with myself? Not to mention other than sleep, my other alterior motive was the fact that I find baking/cooking/cookie decorating incredibly relaxing. Needless to say, there’s nothing better after a long day at work or school in my book.

So I started with some very sad looking, undecorated cookies…

Clearly, these cookies were in no condition to make an appearance at a Halloween office party. Have no fear! Erin is HERE!!I used/made 2 different kinds of icing, cream cheese and vanilla. Let’s start with the cream cheese icing. I pulled this recipe, from…guess where? The Food Network! I used the icing recipe from their Pumpkin Bars (which I intend on conquering soon, since I finally found some pumpkin in this pumpkin shortage). I didn’t follow their recipe directions exactly. I essentially took all the ingredients, cream cheese, butter, confectioners’ sugar, vanilla extract and put them all in a mixing bowl.

Then I used my hand mixer to beat the ingredients smooth. I also added some orange food coloring. And BAM!(always wanted to say that)

Next up, vanilla icing. I used another recipe from Everyday with Rachel Ray. I made what the site called Vanilla Frosting, and it lived up to it’s name, it was definitely frosting and not icing. Not easy to spread on cookies at all! But on a cake this would be PERFECT!! Once again I took the don’t follow the recipe directions exactly and just dump EVERYTHING in a large mixing bowl. Note to self, when a recipe calls for 5 cups of confectioners’ sugar, add them one at a time. This ended up being a rather long and messy mixing process, and my camera fell pray to the mess! OOPS!

The bigger OOPS was the fact that I didn’t realize my camera had fallen prey to my mixing mess until after I had taken pictures of the entire decorating process. Sorry, fellow foodies, you only get to see the end result on this one!

So add icing of different flavors and colors, some chocolate chips, sprinkles and candy corn….

This was such a fun, easy, and delicious experiment, that for once I’m without tweaks! Shocking no?

I guess that leaves me with nothing to do other than tell you to give these recipes a try and make some yummy cookies of your own! I know I’ll be enjoying these A LOT!! Stayed tuned for some more fun, fall recipes!
